Braised Beef in German Beer Sauce

- β1 cup light beerpilsner or lager
- β1 large onionchopped
- β1 large carrotchopped
- β2 stalks celerychopped
- β3 cloves garlicminced
- β2 tablespoons flourall-purpose
- β2 cups beef brothlow-sodium
- β1 tablespoon brown sugarpacked
- β1 teaspoon dijon mustardprepared
- β1 teaspoon dried thymefresh or dried
- β1 teaspoon saltkosher
- β1/2 teaspoon black pepperfreshly ground

Preheat oven to 300Β°F (150Β°C).

Season the short ribs with salt and pepper.

Heat the oil in a large Dutch oven over medium-high heat.

Sear the short ribs until browned on all sides, about 5 minutes.

Remove the short ribs from the pot and set them aside.

Add the chopped onion, carrot, and celery to the pot and cook until the vegetables are softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the beer, beef broth, brown sugar, mustard, thyme, salt, and pepper to the pot.
