Vegetarian Algerian Oat Tagine
A hearty and flavorful Algerian-inspired stew made with oats, vegetables, and aromatic spices. This vegetarian tagine is perfect for a chilly evening.
Ingredients
- β1 cup Oatsrolled oats
- β2 medium Fresh carrotspeeled and chopped
- β1 medium Fresh zucchinipeeled and chopped
- β1 medium Fresh bell peppersany color, seeded and chopped
- β1 can (15 oz) Canned chickpeasdrained and rinsed
- β2 tsp Algerian spice blendsee note*
- β2 tbsp Olive oilfor cooking
- βto taste Salt
- βchopped (optional) Fresh parsley

Heat oil in the bottom of a large, heavy Dutch oven or clay pot over medium heat.

Add the chopped onions and cook until softened, about 5 minutes.

Add the chopped carrots, zucchini, and bell peppers. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

Stir in the chickpeas, Algerian spice blend, salt, and oats. Cook for 2-3 minutes.

Add 2 cups of water to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the oats are tender and the liquid has been absorbed.

Taste and adjust the seasoning as needed.

Serve hot, garnished with chopped fresh parsley if desired.
