Vietnamese Pork Noodle Salad
A refreshing Vietnamese-inspired salad made with crispy pork, light and crunchy vegetables, and gluten-free noodles.
Ingredients
- β1 pound Pork shoulderthinly sliced
- β8 ounces Lightly dressed rice noodlesgluten-free
- β1 medium Crunchy cucumbersliced
- β1 medium Vietnamese carrotspeeled and grated
- β1/4 cup Fresh cilantrochopped
- β2 tablespoons Lime juicefreshly squeezed
- β1 tablespoon Soy saucegluten-free
- β1 teaspoon Hoisin saucegluten-free

Cook the noodles according to the package instructions. Drain and set aside.

In a large skillet, heat 1 tablespoon of oil over medium-high heat.

Add the sliced pork and cook until browned and cooked through, about 5 minutes.

Transfer the pork to a plate and set aside.

In the same skillet, add the sliced cucumber and cook for 2 minutes.

Add the grated carrots and cook for an additional 2 minutes.

In a large bowl, combine the cooked noodles, pork, cucumber mixture, and chopped cilantro.

In a small bowl, whisk together the lime juice, soy sauce, and hoisin sauce.
