Jamaican Spinach Bowl
A light and refreshing bowl filled with the flavors of Jamaica, featuring spinach, citrusy notes, and a hint of island spices.
Ingredients
- β1 cup Quinoarinsed and drained
- β1 cup Canned Black Beans, drained and rinsed
- β2 cups Fresh Spinachchopped
- β1/2 cup Red Onionchopped
- β1 cup Diced Mangofresh
- β2 tsp Jamaican Jerk Seasoning
- β2 tbsp Lime Juice
- β2 tbsp Avocado Oil
- βto taste Salt

1. Preheat oven to 400Β°F (200Β°C).

2. In a medium bowl, mix together quinoa, black beans, and jerk seasoning.

3. In a large skillet, heat avocado oil over medium heat. Add red onion and cook for 3-4 minutes.

4. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.

5. Add cooked quinoa mixture to the skillet and stir to combine.

6. Transfer the mixture to a bowl and top with diced mango, a squeeze of lime juice, and a sprinkle of salt.
