Lazy Sunday Raspberry Jam Stir Fry
A delicious and easy-to-make stir fry dish perfect for a relaxing Sunday morning. Sweet raspberry jam adds a fruity twist to the savory flavors of the stir fry.
Ingredients
- β1 cup Raspberriesfresh or frozen
- β2 tbsp Raspberry jamhomemade or store-bought
- β1/2 lb Porksliced and cooked to a safe internal temperature of 145Β°F (63Β°C)
- β1 medium Onionsliced
- β1 medium Bell peppersliced
- β2 tbsp Soy sauceor to taste
- β1 tsp Vegetable oilfor cooking
- β1 tsp Sesame oiloptional
Instructions

Heat 1 tsp of vegetable oil in a large skillet or wok over medium-high heat.

Add the sliced pork and cook until browned, about 3-4 minutes.

Remove the pork from the skillet and set aside.

Add another tsp of vegetable oil to the skillet and cook the sliced onion and bell pepper until tender, about 4-5 minutes.

Return the cooked pork to the skillet and stir in the soy sauce, raspberry jam, and sesame oil (if using).

Cook for an additional 2-3 minutes, until the sauce has thickened.

Stir in the fresh or frozen raspberries and cook until they have broken down and the sauce has thickened further.

Serve hot over rice or noodles.
