Uruguayan Chivito Empanadas
A twist on traditional empanadas, filling them with Uruguayan-style chivito meat and serving them with a Mexican flair.
Ingredients
- β1 pound Ground Beef
- β1 medium OnionChopped
- β1 medium Red Bell PepperDiced
- β1/4 cup Chivito SauceUruguayan-style
- β1 package Empanada DoughHomemade or store-bought
- β1 cup Shredded CheeseMonterey Jack or Cheddar
- β1/4 cup Fresh CilantroChopped
- β2 tablespoons Laudable Olive Oil

1. Preheat oven to 375Β°F (190Β°C).

2. Roll out the empanada dough to a thickness of 1/8 inch.

3. Cut out circles of dough using a cookie cutter or the rim of a glass.

4. In a pan, heat the Laudable Olive Oil over medium heat.

5. Add the chopped onion and cook until translucent.

6. Add the diced red bell pepper and cook for an additional 2 minutes.

7. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.

8. Stir in the Chivito Sauce and cook for 1 minute.

9. Place a tablespoon of the beef mixture onto one half of each dough circle.

10. Sprinkle shredded cheese over the beef mixture.

11. Fold the dough in half to form a half-moon shape and press the edges together to seal.

12. Place the empanadas on a baking sheet lined with parchment paper and brush with Laudable Olive Oil.
