Keto Okonomiyaki
A keto twist on the classic Japanese street food, this okonomiyaki recipe is made with pork, umami flavors, and topped with a sweet and savory sauce.
Ingredients
- β1/2 pound Pork bellyThinly sliced
- β1 head CauliflowerGrated
- β1 teaspoon Kosher salt
- β1 teaspoon Umami seasoning
- β2 tablespoons Coconut oil
- β1/4 cup Bulgarian feta cheese
- β1 tablespoon Sesame seeds
- β2 tablespoons Okonomiyaki sauce (homemade or store-bought)

1. In a large bowl, combine grated cauliflower, kosher salt, and umami seasoning. Let sit for 10 minutes to allow cauliflower to release liquid.

2. Squeeze out as much liquid as possible from the cauliflower mixture using a cheesecloth or a fine-mesh strainer.

3. In a large skillet, heat coconut oil over medium-high heat. Add the sliced pork belly and cook until browned, about 3-4 minutes per side.

4. In a separate bowl, mix together bulgarian feta cheese and sesame seeds.

5. To assemble the okonomiyaki, place a portion of the cauliflower mixture onto a plate, followed by a slice of the pork belly, and then a sprinkle of the feta-cheese mixture.

6. Drizzle the okonomiyaki sauce over the top of the dish.
