Slovakian Chicken Stew
A hearty and comforting Slovakian stew made with tender chicken, sweet carrots, and a hint of paprika.
Ingredients
- β1 pound boneless, skinless chicken breast or thighs chickenCut into 1-inch pieces
- β2 tablespoons slovakian stewAvailable at Eastern European or specialty stores
- β2 medium carrotsPeel and slice into 1/2-inch rounds
- β1 medium onionChop into 1-inch pieces
- β3 cloves garlicMinced
- β2 medium potatoesPeel and dice into 1-inch cubes
- βto taste salt
- βto taste black pepper
- β1 teaspoon paprika
- β2 cups water

Heat 2 tablespoons of Slovakian stew in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the carrots, potatoes, salt, black pepper, and paprika. Stir to combine.

Add the water and bring to a boil.

Reduce the heat to low and simmer, covered, until the chicken is cooked through and the vegetables are tender, about 30 minutes.

Serve hot, garnished with chopped fresh parsley if desired.
