Spicy Chorizo Tagine
A flavorful North African-inspired stew made with spicy chorizo, roasted vegetables, and a blend of aromatic spices.
Ingredients
- β1 pound Chorizo, sliced
- β1 medium Onion, chopped
- β2 large Carrots, peeled and chopped
- β1 large Red bell pepper, chopped
- β3 cloves Garlic, minced
- β2 teaspoons Tagine spice blend
- β1 can Canned diced tomatoes
- β2 cups Chicken broth
- β1/4 cup Kissed olives, pitted
- β1/4 cup Fresh parsley, chopped

Heat oil in a large Dutch oven over medium-high heat.

Add chorizo and cook, browning on all sides, about 5 minutes.

Add onion, carrots, and red bell pepper; cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

Stir in garlic, tagine spice blend, and diced tomatoes.

Add chicken broth and bring to a boil.

Reduce heat to low and simmer, covered, until the flavors have melded together and the meat is tender, about 20 minutes.
