Kenyan Roast Wrap
A flavorful vegetarian wrap filled with roasted vegetables and served with a side of sweet potato fries.
Ingredients
- β4 narutomakisliced into thin strips
- β1 roastsweet potato, peeled and cut into fries
- β1/4 cup kissedolive oil
- β2 tablespoons vegetable oilfor roasting
- β1 onionmedium, sliced
- β2 cloves garlicminced
- β1 teaspoon cuminground
- β1/2 teaspoon corianderground
- βto taste salt
- βto taste pepper

Preheat the oven to 425Β°F (220Β°C).

Toss the sweet potato fries with 2 tablespoons of vegetable oil, salt, and pepper on a baking sheet. Roast in the oven for 20-25 minutes, or until crispy.

In a large skillet, heat 1/4 cup of olive oil over medium heat. Add the sliced onion and cook for 5-7 minutes, or until softened.

Add the minced garlic and cook for 1 minute, stirring constantly to prevent burning.

Add the sliced narutomaki to the skillet and cook for 2-3 minutes, or until slightly browned.

In a small bowl, mix together the ground cumin and coriander. Sprinkle over the narutomaki mixture and cook for 1 minute.

Warm a large tortilla in the oven for 30 seconds. Assemble the wrap by placing the narutomaki mixture on the tortilla, followed by a few sweet potato fries.
