Keto Udon Noodle Stir Fry
A keto twist on a classic Asian stir fry, using low-carb udon noodles and a variety of vegetables.
Ingredients
- β8 oz Udon noodles
- β2 tbsp Vegetable oil
- β1 cup French green beans
- β1 cup Kissed cherry tomatoes
- β1/4 cup Molten mozzarella cheese
- β2 tbsp Soy sauce (low-carb)

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the French green beans and cook until tender, about 3-4 minutes.

Add the kissed cherry tomatoes and cook for an additional 2 minutes.

Add the udon noodles and stir-fry for 2-3 minutes, until heated through.

In a small bowl, whisk together the molten mozzarella cheese and soy sauce.

Pour the cheese sauce over the noodles and vegetables, and stir-fry for an additional minute.

Serve hot, garnished with additional kissed cherry tomatoes if desired.
