Spicy Thai Spring Rolls
A crunchy and flavorful Thai-inspired spring roll filled with a sweet and spicy mixture. This recipe makes 8-10 spring rolls.
Ingredients
- β8-10 wrappers Wrapped leaf (spring roll wrappers)
- β2 tbsp Korean kissed (gochujang sauce)store-bought
- β1/2 cup Ricottafor filling
- β1/2 cup Midnight (cucumber)thinly sliced
- β1/4 cup Ssam (lettuce leaves)for wrapping

1. In a large bowl, mix together ricotta, gochujang sauce, and a pinch of salt.

2. Add the sliced cucumber to the bowl and stir to combine.

3. Lay a spring roll wrapper on a clean surface with one corner pointing towards you.

4. Place about 1 tablespoon of the ricotta-cucumber mixture in the center of the wrapper.

5. Brush the edges of the wrapper with water.

6. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.

7. Repeat with the remaining wrappers and filling.
