Classic Italian Amaretti Cookies
A traditional Italian dessert featuring crunchy amaretti cookies, perfect for dunking in coffee or wine.
Ingredients
- β2 1/4 cups All-purpose flour
- β1 cup Amaretti cookies, finely ground
- β1 cup Granulated sugar
- β2 large Egg whites
- β1 teaspoon Almond extract
- β1/4 teaspoon Salt
- β1/2 cup Unsalted butter, softened

Preheat the oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour and ground amaretti cookies.

In a large bowl, beat the egg whites and granulated sugar until stiff peaks form.

Add the almond extract and salt to the egg mixture and beat until combined.

Gradually add the flour mixture to the egg mixture and beat until just combined.

Drop the dough by tablespoonfuls onto the prepared baking sheet, about 2 inches apart.

Bake for 15-20 minutes, or until the edges are lightly golden.
