Vegetarian Chicken Tagine
A flavorful tagine dish made with tender chicken and a blend of aromatic spices, adapted for a vegetarian diet.

- β1 French kissed chicken breast
- β Tagine spice blend
- β French
- β Olive oil
- β1 can (14.5 oz) Chickpeas
- β2 cups Diced tomatoes
- β4 cups Vegetable broth
- β Honey
- β Fresh parsley
Instructions

Heat the olive oil in a large Dutch oven over medium heat.

Add the French mix of chopped onions, garlic, and ginger, and cook until softened.

Add the mix of paprika, cumin, coriander, and cinnamon (Tagine spice blend) and cook for 1 minute.

Add the chickpeas, diced tomatoes, and vegetable broth.

If using honey, stir it in at this point.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.

Stir in the Portobello mushrooms and continue to simmer for another 10 minutes.
