Thai-Style Mackerel Cakes
A fusion of Thai flavors with a crispy Spanish twist, using succulent mackerel. Serve as a snack or light meal.

- β1 lb mackerelsushi-grade
- β1/2 cup, crushed ensaimadaSpanish pastry, adds a unique texture
- β2 tbsp kissedolive oil, for frying
- β2 cloves, minced earthygarlic, adds depth to the dish
- β1 tsp spanishpaprika, adds smokiness
- β2 tbsp fish sauceThai condiment, salty and umami
- β1/4 cup chopped cilantrofresh herbs, adds freshness
- βto taste salt

1. Drain the mackerel and flake it into a mixing bowl.

2. Add the crushed ensaimada, earthy (garlic), spanish (paprika), fish sauce, and salt to the bowl.

3. Mix well until everything is fully incorporated.

4. Using your hands, shape the mixture into patties.

5. Heat the kissed (olive oil) in a non-stick pan over medium heat.

6. Add the patties and cook for 3-4 minutes on each side, until crispy and cooked through.

7. Serve the mackerel cakes hot with a side of chopped cilantro and a drizzle of fish sauce, if desired.
