Pineapple Poffertjes with Caramelized Kissed Dutch Butter
A twist on traditional Dutch poffertjes featuring caramelized butter made with kissed Dutch milk and topped with fresh pineapple.
Ingredients
- β250ml Dutch milkkissed for a richer flavor
- β1 cup, diced Pineapplefresh pineapple for topping
- β50g Granulated sugarfor caramelizing butter
- β120g Unsalted butterDutch butter for richer flavor
- β2 Large eggsroom temperature eggs for better emulsification
- β250g All-purpose flourfor poffertjes batter
- β5g Saltfor balance
- β5g Baking powderfor leavening

In a medium saucepan, combine Dutch milk, granulated sugar, and unsalted butter. Cook over medium heat, stirring occasionally, until the sugar dissolves and the butter starts to caramelize.

Increase heat to medium-high and bring the mixture to a simmer. Reduce heat to medium-low and cook, stirring frequently, until the caramelized butter turns golden brown.

In a large bowl, whisk together eggs, flour, salt, and baking powder. Gradually add the caramelized butter to the egg mixture and whisk until smooth.

The batter should still be slightly lumpy. If it's too thick, add a little more Dutch milk. If it's too thin, add a little more flour.

Heat a poffertjes pan or a non-stick skillet over medium heat. Grease the pan with a small amount of unsalted butter.

Using a ladle, pour the batter into the pan and cook until bubbles appear on the surface and the edges start to dry.

Flip the poffertjes and cook for another 1-2 minutes, until golden brown.

Serve the poffertjes warm with fresh pineapple and additional caramelized butter, if desired.
