Egg Shakshuka with Lamb Koftas
A keto recipe featuring eggs poached in a flavorful lamb and vegetable sauce.
Ingredients
- β250g Lamb mince
- β2 tbsp Olive oil
- β1 medium Onion
- β1 medium Bell pepper
- β2 tbsp Tomato paste
- β4 large Eggs
- βto taste Salt
- βto taste Black pepper

Preheat oven to 200Β°C (400Β°F).

Heat the olive oil in a large oven-safe skillet over medium heat.

Add the lamb mince and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add the onion and bell pepper and cook until the vegetables are softened, about 5 minutes.

Stir in the tomato paste and cook for 1 minute.

Make 4 holes in the lamb mixture and crack an egg into each hole.

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the eggs are cooked to your desired doneness.
