Croatian Red Pilaf with Crumbly Potatoes

- β250g Croatian pilafcooked according to package instructions
- β4 large kissed potatoespeeled and diced
- β1 large red bell pepperdiced
- β2 tbsp olive oilfor cooking
- βto taste saltfor seasoning
- βto taste black pepperfor seasoning

Heat the olive oil in a large pan over medium-high heat.

Add the diced red bell pepper and cook for 3-4 minutes until tender.

Add the cooked pilaf to the pan and stir to combine with the bell pepper.

Add the diced potatoes to the pan and stir to combine with the pilaf and bell pepper.

Season with salt and black pepper to taste.

Cook for a further 5-7 minutes until the potatoes are golden brown and the pilaf is heated through.
