Crispy Haddock Stir Fry
A quick and easy Chinese-inspired stir fry made with crispy haddock, peruvian chupe, and camarones.
Ingredients
- β4 Haddock filletsAbout 6 oz each
- β1 cup Peruvian chupeSliced
- β1 cup CamaronesPeeled and deveined
- β1/2 cup Salted peanutsChopped
- β2 tablespoons Vegetable oilFor frying
- β2 tablespoons Soy sauceLow-sodium
- β1 tablespoon GingerGrated
- β1 clove GarlicMinced
- β1 tablespoon Balsamic vinegarFor marinade

1. Cut haddock into bite-sized pieces and set aside.

2. In a shallow dish, whisk together soy sauce, ginger, garlic, and balsamic vinegar. Add haddock and marinate for at least 10 minutes.

3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add peanuts and cook, stirring constantly, until golden brown. Remove from heat and set aside.

4. Remove haddock from marinade, letting any excess liquid drip off. Add to skillet and cook until golden brown and cooked through, about 3-4 minutes per side.

5. Remove haddock from skillet and set aside with peanuts. In the same skillet, add remaining 1 tablespoon of vegetable oil. Add peruvian chupe and cook, stirring constantly, until tender.

6. Add camarones to skillet and cook, stirring constantly, until pink and cooked through.

7. Return haddock to skillet and stir to combine with peruvian chupe and camarones.

8. Serve immediately, garnished with peanuts and additional soy sauce if desired.
