Hash Brown Frittata
A Mediterranean-inspired breakfast dish using sweet potatoes and Manchego cheese. Perfect for a sunny morning!
Ingredients
- ●2 large Sun-sweetened sweet potatoespeeled and diced
- ●1/2 cup Hashdiced
- ●2 tbsp Mediterranean olive oilfor frying
- ● Salt and pepper to taste
- ●1/2 cup Manchego cheeseshredded
Instructions

Preheat oven to 375°F (190°C).

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add the diced sweet potatoes and hash, and cook for about 5-7 minutes, until they're lightly browned.

In a separate bowl, whisk together eggs and a pinch of salt.

Pour the egg mixture over the sweet potatoes and hash.

Transfer the skillet to the preheated oven and bake for about 20-25 minutes, until the eggs are set.

Remove the skillet from the oven and sprinkle Manchego cheese on top.

Return the skillet to the oven and bake for an additional 2-3 minutes, until the cheese is melted and bubbly.

Note: If using a non-stick skillet, reduce the amount of olive oil used for frying.
