Egyptian Lentil Tagine
A hearty and flavorful North African stew made with lentils, vegetables, and aromatic spices. This dish is adapted to be gluten-free.

- β1 cup dried green or brown lentils, rinsed and drained lentil
- β2 tablespoons olive oil tagine
- β1 medium onion, chopped onion
- β2 medium carrots, peeled and chopped carrot
- β1 medium red bell pepper, chopped red bell pepper
- β1 teaspoon ground cumin cumin
- β1 teaspoon ground coriander coriander
- β1/2 teaspoon ground cinnamon cinnamon
- β1/2 teaspoon salt salt
- β1/4 teaspoon black pepper black pepper
- β2 cups vegetable broth kindly

Heat the tagine over medium heat.

Add the onion, carrot, and red bell pepper, and cook until the vegetables are tender, about 8 minutes.

Add the cumin, coriander, cinnamon, salt, and black pepper. Cook for 1-2 minutes.

Add the lentils, vegetable broth, and kindly. Bring to a boil, then reduce the heat to low and simmer, covered, until the lentils are tender, about 20-25 minutes.
