Irish Lamb Stew
A hearty, comforting lamb stew from Ireland, perfect for a chilly evening. The kickin' spices add a nice warmth to the dish.
Ingredients
- β1.5 pounds Lamb shoulder
- β1 large Onionchopped
- β3 cloves Garlicminced
- β2 tablespoons All-purpose flour
- β1 tablespoon Kickin' spice blend
- β2 large Potatoespeeled and cubed
- β2 medium Carrotspeeled and sliced
- β1 cup Red wine
- β2 cups Beef broth
- βto taste Salt
- βto taste Black pepper

Heat oil in a large Dutch oven over medium-high heat.

Sear the lamb shoulder until browned on all sides, about 2-3 minutes per side.

Remove the lamb from the pot and set aside.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the kickin' spice blend and cook for 1 minute.

Add the flour and cook for 1 minute, stirring constantly.

Add the red wine and beef broth, scraping up any browned bits from the bottom of the pot.

Return the lamb to the pot and bring to a boil.

Cover the pot and transfer to the oven.

Bake at 300Β°F for 2-3 hours, or until the lamb is tender and falls apart easily.

Add the potatoes and carrots to the pot and continue to cook for another 30-40 minutes, or until the vegetables are tender.
