Croatian Stew Vegan Version
A hearty, comforting stew with a twist, made vegan by substituting traditional meats with tofu.

Ingredients
- β1 block (14 oz) TofuExtra-firm, drained and cubed
- β2 medium KickinPeel and dice
- β2 tsp Croatian stew spice mixAvailable in most international grocery stores or online
- β4 cups Vegetable brothMake sure it's vegan
- β1 medium OnionPeel and chop
- β3 cloves GarlicMinced
- β2 medium CarrotsPeel and chop
- β2 large PotatoesPeel and chop
- β2 tbsp Tomato pasteMake sure it's vegan
- β1/4 cup Red wine (optional)Use a vegan red wine or omit

Instructions

Heat a large Dutch oven over medium heat.

Add the kickin and cook until browned, about 5 minutes.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the carrots and potatoes and cook for an additional 5 minutes.

Add the vegetable broth, tomato paste, stew spice mix, and tofu.

Bring to a boil, then reduce the heat to low and simmer, covered, for 30 minutes.
