Keto Russian-Style Anchovy Skewers
A keto-friendly twist on traditional Russian-style anchovy skewers, featuring a delicious combination of flavors and textures.
Ingredients
- β12 oz Anchoviesdrained and rinsed
- β6 oz Meyolchi (Korean anchovies)optional
- β1 bunch Russian dillchopped
- β2 Lemonjuiced
- β3 cloves Garlicminced
- β1/4 cup Olive oil
- βto taste Salt
- βto taste Black pepper
- β1 package Skewerssoaked in water for 30 minutes

Preheat grill to medium-high heat.

In a large bowl, whisk together lemon juice, garlic, olive oil, salt, and black pepper.

Add the anchovies and Meyolchi (if using) to the bowl and toss to coat.

Thread the anchovy mixture onto the skewers, leaving a small space between each piece.

Grill the skewers for 2-3 minutes per side, or until the anchovies are lightly charred.

Note: If using Meyolchi, be sure to rinse it well before using to remove any excess salt.
