Jamaican Chicken Keto Pilaf
A flavorful and spicy Jamaican-inspired dish made with chicken, cauliflower pilaf, and a hint of Caribbean seasoning. Perfect for a keto diet.

- β1 head cauliflower
- β2 tablespoons coconut oil
- β2 teaspoons Jamaican jerk seasoning
- β1 teaspoon garlic powder
- β1 teaspoon onion powder
- β1/2 teaspoon kosher salt
- β1/4 teaspoon black pepper
- βchopped (optional) fresh cilantro
- β1/4 teaspoon paprika

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the jerk seasoning, garlic powder, onion powder, salt, black pepper, and paprika.

Rub the spice mixture all over the chicken, making sure to coat it evenly.

Heat the coconut oil in a large oven-safe skillet over medium-high heat.

Sear the chicken for 2-3 minutes on each side, or until it's browned.
