Keto Mexican Butter Chicken
A keto-friendly twist on traditional Mexican chicken, made rich with butter and cooked to perfection. Serve hot with a side of cauliflower rice.
Ingredients
- β2 lbs Chicken breastsboneless, skinless
- β1/2 cup Butterunsalted
- β2 tsp Cumin
- β1 tsp Chili powder
- β1 tsp Garlic powder
- β1 tsp Salt
- β1 tsp Black pepper
- β2 tbsp Lime juice
- β1/4 cup Cilantrochopped
Instructions

Heat 1/4 cup of butter in a large skillet over medium-high heat.

Add chicken breasts and cook until browned on both sides, about 5-6 minutes.

Remove chicken from skillet and set aside.

Reduce heat to medium and add remaining 1/4 cup of butter to skillet.

Add cumin, chili powder, garlic powder, salt, and black pepper. Cook for 1-2 minutes, until fragrant.

Add lime juice to skillet and stir to combine.

Return chicken to skillet and cook until cooked through, about 5-7 minutes.
