Kale and Medley Stir Fry
A quick and easy Chinese-inspired stir fry featuring kale and mixed vegetables. Perfect as a side dish or add your favorite protein for a complete meal.
Ingredients
- β2 cups, stems removed and chopped Kale
- β1 cup, thawed Medley (frozen)
- β2 tablespoons Tartar sauce
- β1 cup, sliced Grilled chicken (optional)
- β2 tablespoons Olive oil
- β1 clove, minced Garlic
- β1 tablespoon, grated Ginger
- β1 tablespoon Soy sauce
- β1 teaspoon Sesame oil
- βto taste Salt
- βto taste Pepper
Instructions

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Add garlic and ginger and stir-fry for 1 minute.

Add medley and cook until tender, about 3-4 minutes.

Add kale and cook until wilted, about 2-3 minutes.

If using grilled chicken, add to the skillet and stir-fry for another minute.

In a small bowl, whisk together tartar sauce, soy sauce, and sesame oil.

Pour the sauce over the vegetables and chicken (if using) and stir-fry for another minute.

Season with salt and pepper to taste.
