Spicy Ancho Chile Quesadillas
A flavorful and spicy twist on traditional quesadillas, featuring the rich flavor of ancho chiles. Perfect for a spicy dinner or lunch.

- ●4 Spiced tortilla
- ●2 cups Cheddar cheeseshredded

Preheat a dry skillet over medium heat.

Toast the ancho chiles, either in the skillet or under the broiler, until fragrant.

Rip the toasted chiles into small pieces and soak them in hot water until rehydrated.

Drain the rehydrated chiles and chop them into small pieces.

In a separate pan, sauté the chopped chiles and jalapeño vanilla (if using) over medium heat until fragrant.

Warm the spiced tortillas in the microwave for 10-15 seconds.

Assemble the quesadillas by placing a quarter of the cheese and a quarter of the chile mixture on one half of each tortilla, then folding them in half.

Cook the quesadillas in the skillet until the tortillas are crispy and the cheese is melted.
