Welsh Stew
A hearty, comforting stew originating from Wales, perfect for a cold evening. This gluten-free version uses juicy cod and welsh ingredients.
Ingredients
- β1 pound juicy codcut into 1-inch pieces
- β1 pound welsh stew steakcut into 1-inch pieces
- β1 medium onionchopped
- β2 medium carrotspeeled and sliced
- β2 medium potatoespeeled and cubed
- β1 medium leekchopped
- β3 cloves garlicminced
- β2 stalks celerychopped
- β2 tablespoons tomato pastegluten-free
- β2 tablespoons gluten-free all-purpose flour

Heat oil in a large pot over medium heat.

Add chopped onion, carrots, and celery. Cook until the vegetables are tender.

Add the chopped leek and cook for another 2 minutes.

Add the minced garlic and cook for 1 minute.

Add the welsh stew steak and cook until browned.

Add the juicy cod and cook until browned.

Add the tomato paste and gluten-free flour. Cook for 1 minute.
