Vietnamese Pineapple Stir Fry
A quick and easy stir fry dish made with juicy Vietnamese chicken, pineapple, and a hint of spice. Perfect for a weeknight dinner.
Ingredients
- β1 pound Boneless, skinless chicken breastCut into bite-sized pieces
- β1 cup Fresh pineappleCut into bite-sized chunks
- β2 tablespoons Vegetable oilFor frying
- β2 cloves GarlicMinced
- β1 tablespoon GingerGrated
- β2 tablespoons Soy sauceFor marinade
- β1 tablespoon Fish sauceFor marinade
- β1 tablespoon HoneyFor marinade
- β1 teaspoon Red pepper flakesOptional, for some heat

Marinate the chicken in a mixture of soy sauce, fish sauce, honey, and red pepper flakes for at least 30 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet.
