Grilled German Sausage Stew
A hearty, one-pot dish made with juicy German sausages and snappy vegetables.
Ingredients
- β4 German sausagesyou can use any type of German sausage you like (e.g. Weisswurst or Bratwurst)
- β1 large onionchopped
- β2 medium carrotpeeled and chopped
- β2 large potatopeeled and chopped
- β2 tablespoons tomato paste
- β2 cups beef broth
- β1 cup beeroptional (e.g. a German lager)
- β1 teaspoon salt
- β1/2 teaspoon black pepper
- β1/4 cup fresh parsleychopped (for garnish)

Heat a large Dutch oven over medium-high heat.

Add the sausages and cook until browned on all sides, about 5 minutes.

Remove the sausages from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the chopped carrot and potato to the pot and cook for another 5 minutes.

Add the tomato paste and cook for 1 minute, stirring constantly.

Add the beef broth, beer (if using), salt, and pepper to the pot.

Return the sausages to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 20 minutes.
