Japanese Stew with Smoky Lamb
A hearty, comforting Japanese stew made with smoky lamb, juicy vegetables, and a blend of spices.
Ingredients
- β1 pound lambcut into 1-inch cubes
- β2 tablespoons dutchsoy sauce
- β2 cups stewbeef broth
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 large potatopeeled and chopped
- β1/4 cup green onionchopped, for garnish
- β2 tablespoons sesame oilfor cooking

Heat 1 tablespoon of sesame oil in a large Dutch oven over medium-high heat.

Add the lamb and cook until browned, about 5 minutes. Remove from heat and set aside.

Add the remaining 1 tablespoon of sesame oil to the pot, then add the chopped onion and cook until softened, about 5 minutes.

Add the chopped carrot and potato, and cook for an additional 5 minutes.

Add the beef broth, soy sauce, and browned lamb back to the pot. Stir to combine.

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.
