Russian Beef Papillote with Juicy Vegetables

Ingredients

- ●2 medium carrotspeeled and chopped

- ●1 bunch fresh parsleychopped for garnish

Preheat oven to 400°F (200°C).

Season the beef with salt and black pepper.

Heat olive oil in a pan over medium-high heat. Sear the beef for 2-3 minutes on each side.

Transfer the beef to a piece of parchment paper or aluminum foil, leaving a 1-inch border around it.

Arrange the chopped carrots, onions, and potatoes around the beef.

Place the papillote on a baking sheet and bake for 25-30 minutes or until the beef reaches an internal temperature of 135°F (57°C) for medium-rare.
