Slovakian Pork Stew
A hearty Slovakian-inspired stew made with tender pork, juicy vegetables, and a rich, savory broth.
Ingredients
- β1.5 lbs pork shouldercut into 1-inch cubes
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotspeeled and chopped
- β2 stalks celerychopped
- β1 cup red winedry
- β2 cups beef brothhomemade or store-bought
- β2 tbsp slovakian paprikasmoked
- β1 tsp saltto taste
- β1 tsp black pepperto taste

Heat 2 tbsp of oil in a large Dutch oven over medium-high heat.

Add the pork and cook until browned on all sides, about 5 minutes.

Remove the pork from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and celery to the pot and cook for 5 minutes.

Add the red wine to the pot and cook until the liquid is almost completely reduced, about 5 minutes.

Add the beef broth, browned pork, and smoked paprika to the pot.

Bring the mixture to a boil, then cover the pot and transfer it to the oven.

Bake for 2 1/2 hours, or until the pork is tender and the sauce has thickened.
