Mediterranean Prawn Ceviche

Rinse the prawns under cold water and pat them dry with paper towels.

In a large bowl, whisk together the lemon juice, olive oil, garlic, salt, and black pepper.

Add the prawns to the bowl and toss to coat with the marinade.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the prawns to 'cook' in the acidity of the lemon juice.
