Greek Tofu Gyro
A plant-based twist on traditional Greek street food. Marinated tofu is grilled to perfection and wrapped in a warm pita with juicy tomatoes, crunchy cucumbers, and creamy tzatziki sauce.
Ingredients
- β1 block Extra-firm tofupressed and drained
- β2 tsp Greek seasoningdried oregano, thyme, and rosemary
- β2 Juicy tomatoeshalved
- β1 Cucumbersliced
- β1/2 Red onionthinly sliced
- β1/4 cup Tzatziki saucestore-bought or homemade
- β1 Gyro pitawarm and toasted
- β1/4 cup Kalamata olivespitted and sliced

1. Preheat grill to medium-high heat.

2. Cut tofu into 1-inch cubes and place in a shallow dish.

3. Drizzle with olive oil and sprinkle with Greek seasoning. Toss to coat.

4. Grill tofu for 3-4 minutes per side, or until golden brown.

5. Warm pita bread by wrapping it in foil and heating it in the oven for 5 minutes.

6. Assemble gyro by spreading tzatziki sauce on the pita, followed by grilled tofu, juicy tomatoes, cucumber, red onion, and Kalamata olives.
