Malaysian Satay Chicken
A flavorful and aromatic Malaysian-inspired dish featuring marinated chicken, served with a peanut sauce. Perfect for a quick and easy dinner.
Ingredients
- β500g chicken breast
- β100ml coconut milk
- β satay peanut sauce (store-bought or homemade)Optional
- β2 tbsp soy sauce
- β1 tsp brown sugar
- β2 cloves garlic
- β1-inch piece ginger
- β2 tbsp vegetable oil

Instructions

In a blender or food processor, combine coconut milk, soy sauce, brown sugar, garlic, and ginger. Blend until smooth.

In a large bowl, whisk together the blended mixture and a pinch of salt. Add the chicken breast and coat evenly.

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.

Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers, if using.

Grill the chicken for 8-10 minutes per side, or until cooked through. Transfer to a plate and let rest for 5 minutes.

Meanwhile, heat the peanut sauce (if using) in a small saucepan over low heat.

Serve the grilled chicken with the peanut sauce spooned over the top. Garnish with fresh cilantro, if desired.
