Crispy Ethiopian Crumb Fritters
A flavorful and crunchy snack inspired by Ethiopian cuisine, made with juicy tomatoes and crispy bread crumbs.
Ingredients
- β2 cups, diced 1 large juicy tomato
- β 1/2 cup crispy bread crumbsPanko or regular
- β 1/4 cup all-purpose flour
- β 1/2 teaspoon Ethiopian berbere spiceor substitute with chili powder
- β 1/4 teaspoon salt
- β 1/4 teaspoon black pepper
- β 2 tablespoons olive oil

Preheat the oven to 375Β°F (190Β°C).

In a large bowl, mix together the diced tomato, bread crumbs, flour, berbere spice, salt, and black pepper.

Using your hands, gently mix the ingredients until they are well combined.

Shape the mixture into small patties, about 1 1/2 inches (3.8 cm) in diameter and 1/2 inch (1.3 cm) thick.

Place the patties on a baking sheet lined with parchment paper.

Drizzle the olive oil over the patties.
