Charred Lamb Cacio e Pepe
A creative twist on the Italian classic, featuring charred lamb and a rich cacio e pepe sauce.
Ingredients
- β1.5 lbs lamb shoulderbone-in, preferably with a good layer of fat
- β2 tbsp olive oilfor char-grilling
- β1 tsp italian seasoningsdried herbs like thyme, rosemary, and oregano
- β1 cup cacio e pepe cheesePecorino Romano, preferably freshly grated
- β2 tbsp pepperfreshly ground black pepper
- β1 baguette italian breadpreferably day-old

Preheat grill to medium-high heat. Season the lamb with Italian seasonings.
