Crispy Pork Chow Fun
A classic Cantonese dish made with crispy pork, stir-fried with vegetables and served over a bed of fun noodles.
Ingredients
- β1 pound Pork shoulder
- β8 ounces Chow fun noodles
- β2 medium Bitter melon
- β1/4 cup Chopped scallions
- β1 cup Juicy tomatoes
- β2 tablespoons Vegetable oil
- β2 tablespoons Soy sauce
- β1 tablespoon Oyster sauce
- β Salt and pepperto taste
Instructions

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Add the chopped scallions and cook until fragrant, about 30 seconds.

Add the pork shoulder and cook until browned, about 3-4 minutes.

Add the bitter melon and cook until tender, about 2-3 minutes.

Add the chow fun noodles and stir-fry for 1-2 minutes.

Add the juicy tomatoes and stir-fry for another minute.

Season with soy sauce, oyster sauce, salt, and pepper to taste.

Transfer the noodle mixture to a serving platter or individual plates.

Cook the remaining 1 tablespoon of vegetable oil in the wok or skillet over high heat.

Add the cooked pork shoulder and stir-fry until crispy, about 2-3 minutes.
