Algerian Chicken Tagine
A traditional Algerian stew made with chicken, tomatoes, and spices, slow-cooked in a clay pot.

Ingredients
- β1 1/2 pounds chicken breastboneless, skinless
- β2 teaspoons tagine spice blendor a combination of cumin, coriander, and paprika
- β2 tomatocrushed
- β2 tablespoons olive oil
- β1 onionchopped
- β3 cloves garlicminced
- β2 tablespoons lemon juice
- β1 cup water
- β1/4 cup juicy olivespitted

Instructions

Heat oil in the bottom of a clay or ceramic tagine over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add chicken and cook until browned on all sides, about 5 minutes.

Add tagine spice blend, tomato, lemon juice, and water.

Bring to a boil, then cover and transfer to the oven.

Bake at 300Β°F for 30 minutes, or until the chicken is cooked through.
