Basil and Polish Sausage Tagine
A flavorful and aromatic Moroccan-inspired stew from Eastern Europe, made with Polish sausage and fresh basil.
Ingredients
- β500g Polish Sausagecasings removed
- β1 medium Onionchopped
- β3 cloves Garlicminced
- βhandful Basilfresh and chopped
- β1 tsp Cuminground
- β1 tsp Corianderground
- β1 tsp Paprikasweet
- β1 tsp Tagine Spice Mixstore-bought or homemade
- β2 tbsp Olive Oilfor cooking
- β1 cup Chicken Brothlow-sodium

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for 1 minute.

Add Polish sausage and cook, breaking up with a spoon, until browned, about 5 minutes.

Add cumin, coriander, paprika, and tagine spice mix; cook for 1 minute.

Add chopped basil, chicken broth, and bring to a simmer.

Reduce heat to low and cook, covered, until the sausage is cooked through and the sauce has thickened, about 20 minutes.

Season with salt and pepper to taste.
