Scallion and Menemen Turkish Omelette
A flavorful and spicy Turkish-inspired omelette filled with scallions and menemen.

Crack 2 eggs into a bowl and whisk them together.

Heat a small non-stick pan over medium heat.

Add 1 tablespoon of oil to the pan and swirl it around.

Add the chopped scallions and menemen to the pan and sauté for 2-3 minutes.

Pour the whisked eggs over the scallions and menemen.

Sprinkle a pinch of Turkish paprika over the eggs.

Use a spatula to gently lift and fold the edges of the omelette towards the center.
