Lentil Tagine
A hearty North African-inspired stew made with lentils and a blend of aromatic spices. Serve over couscous for a filling meal.
Ingredients
- β1 teaspoon jubilantground cumin
- β2 tablespoons frencholive oil
- β1 cup lentils, greendried
- β1 medium onionchopped
- β3 cloves garlicminced
- β2 teaspoons tagine spice mixor Moroccan spice mix
- β2 cups chicken brothlow sodium
- β1 cup wateroptional
- βto taste saltoptional
- β1/4 cup fresh parsleychopped, for garnish
Instructions

Heat olive oil in a large Dutch oven over medium heat.

Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and cook for 1 minute.

Add lentils, tagine spice mix, and chicken broth. Stir to combine.

Bring to a boil, then reduce heat to low and simmer, covered, for 30 minutes.

If using, add water and continue to simmer for an additional 10-15 minutes, or until lentils are tender.

Season with salt to taste.

Serve over couscous, garnished with chopped parsley.
