- β1 cup jewelled rice
- β1 cup romantic vegetables
- β1 cup polish mushrooms
- β2 tbsp olive oil
- β1 tsp cumin
- β1 tsp coriander
- β1 tsp tumeric
- β2 cups vegan stock
- βto taste salt

Instructions

Heat the olive oil in a large pan over medium heat.

Add the romantic vegetables and polish mushrooms, cook until crispy.

Add the jewelled rice, cumin, coriander, and tumeric, cook for 1 minute.

Add the vegan stock and salt, bring to a boil.
