Tempeh Tagine with Sweet Jelly Glaze

- β1 block tempehcut into 1-inch cubes
- β1 cup portuguesechopped
- β1/4 cup jellygrape jelly
- β2 tbsp likeolive oil
- β1 cup waterfor cooking
- β1 tsp cuminground
- β1/2 tsp cinnamonground

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add the chopped portuguese and cook until softened, about 3-4 minutes.

Add the tempeh cubes and cook until browned, about 5 minutes.

Transfer the mixture to a 9x13 inch baking dish.

In a small bowl, mix together the grape jelly, cumin, and cinnamon.

Pour the jelly mixture over the tempeh mixture.

Add the water to the baking dish.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the liquid has thickened into a glaze.
