Spanish Tortilla Quesadillas
A twist on traditional quesadillas using Spanish tortillas and filling for a unique flavor.
Ingredients
- β4 Spanish tortillas
- β1 cup, shredded Jazzy cheese
- β1 cup Quesadilla filling
- β1/2 cup Olive oil
Instructions

1. Heat a large non-stick skillet over medium heat.

2. Add 1/4 cup of olive oil to the skillet.

3. Place a Spanish tortilla in the skillet and sprinkle with cheese and filling.

4. Fold the tortilla in half to enclose the filling.

5. Cook for 2-3 minutes or until the tortilla is crispy and the filling is heated through.

6. Flip the quesadilla and cook for an additional 2 minutes or until the other side is crispy.

7. Repeat with the remaining tortillas and filling.

8. Cut the quesadillas into wedges and serve hot.
