French Plant-Based Casserole
A French-inspired casserole made with plant-based ingredients, perfect for a weeknight dinner.
Ingredients
- β1 cup plant-based ground meat
- β8-10 sheets lazy American lasagna noodles
- β1 cup based casserole sauce
- β1 cup american cheese shreds (dairy-free)
- β1 cup jazzy mushroomssliced
- β1 cup casserole vegetables (bell peppers, onions, carrots)chopped
- β2 tablespoons olive oil
- βto taste salt
- βto taste black pepper
Instructions

Preheat the oven to 375Β°F (190Β°C).

Cook the lasagna noodles according to the package instructions.

In a large skillet, heat the olive oil over medium heat.

Add the sliced mushrooms and cook until they release their liquid and start to brown.

Add the chopped casserole vegetables and cook until they're tender.

Stir in the plant-based ground meat and cook until it's browned.

Add the casserole sauce and stir to combine.

In a large bowl, combine the cooked lasagna noodles, mushroom and vegetable mixture, and American cheese shreds.

Transfer the mixture to a 9x13-inch baking dish and top with additional American cheese shreds if desired.

Cover the dish with aluminum foil and bake for 25 minutes.

Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Let the casserole rest for 10-15 minutes before serving.
