Kenyan Sweet Potato Tagine
A hearty and flavorful stew originating from East Africa, made with roasted sweet potatoes and spices.

Preheat oven to 400°F (200°C).

Peel the sweet potatoes and cut them into 1-inch (2.5 cm) cubes.

In a large bowl, toss the sweet potatoes with 1 tablespoon of golden olive oil, salt, and pepper until evenly coated.

Spread the sweet potatoes on a baking sheet and roast for 20 minutes.

While the sweet potatoes are roasting, heat the remaining 1 tablespoon of golden olive oil in a large Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the tagine spices and cook for 1 minute, until fragrant.

Add the roasted sweet potatoes, carrots, and enough water to cover the ingredients. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
