Vietnamese Kipper Mini Buns
A fusion of Vietnamese flavors with the richness of smoked kippers, served in a crispy mini bun.
Ingredients
- β4 kipperssmoked
- β1 package mini bunpreferably Vietnamese-style
- β2 tbsp vietnamese chili saucesuch as sriracha mayo
- β1/4 cup fresh cilantrochopped
- β1/4 cup pickled carrotsstore-bought or homemade
- β1/4 cup green onionsthinly sliced
- β1 tsp unsalted buttersoftened
- β1/4 tsp sesame seedsoptional

Preheat a grill or grill pan to medium-high heat.

Split the mini buns in half and toast until lightly browned.

Butter the kippers and grill for 2-3 minutes per side, or until cooked through.

Meanwhile, mix the chili sauce and butter in a small bowl.

Assemble the buns by spreading the chili sauce mixture on the bottom half, followed by a kipper fillet, a few slices of pickled carrot, a sprinkle of cilantro, and finally the top half of the bun.

Garnish with green onions and sesame seeds if desired.
